List whether they are classical or contemporary recipes and describe their nutritional value. List the cultural background of each recipe For example- FRANCE.
For each recipe you have selected, answer the following questions:
How can the standard recipe card help to minimise waste?
Explain the requirements for selecting and defrosting ingredients to ensure quality and freshness.
Explain the cookery methods to be used and the reason why this cookery method will be appropriate.
List knives and equipment that are required and explain what safe operational practices need to be followed when using the equipment?
Explain any portioning requirements associated with the dish.
How should the dishes look and taste once finished? How will they be presented? What garnishes or sauces will be used?

Standard Recipe For Salmon

Classical or Contemporary Recipe
These are contemporary recipes that can be prepared in a different methods in different countries. The recipes tend to vary from country to country depending on the type of ingredients that need to be used to prepare the dish. Based on the cultural background of each recipe, grilled flounder has been considered to be a healthy diet whereby the American Heart Association recommended eating grilled or baked fish at least two times a week (Delishably, 2022). The Flounder has lived in the Atlantic along the east coast of Florida and Nova Scotia for more than 50 million years. Grilling for Flounder was done in the US as this was the cheapest method to prepare the dish and serve it with another dish of your choice (Sam, 2022). The snapper is found in Atlantic waters. The snapper is concentrated around the Bahamas, Florida, and also found in Brazil. The fish has been adopted into different cuisines. The roasted snapper was first eaten by the African, Spanish, and English settlers and enslaved peoples who found this method of preparing the dish to be time-saving and applicable to their situation. The snapper is considered to be healthier and it’s recommended for consumption. On the other hand, deep-fried salmon has been an integral part of the human diet. The history of salmon is dwelling in southern France near the Vezere River. Julius Caesar who was the son of a royal king was the first person to try and prepare the deep-fried salmon. The dish was also prepared in the US in the 19 century and it was found to be nutritious for human health. This was then shifted to big hotels where it was prepared to attract customers’ attention due to its aroma flavor.
Standard Recipe Card
A standard recipe card is useful when it comes to minimizing waste. This is a result of the card controlling your food cost and profits. You can easily budget the ingredients you need to prepare a certain dish and calculate the profits you will make after preparing the dish. The standard recipe card provides a portion control which is a critical factor when it comes to food cost and profits (Jeffrey, 2010).
Requirements for Defrosting Ingredients
Some of the requirements that need to be checked when it comes to selecting and defrosting ingredients to increase freshness and enhance quality include;
Select fresh ingredients which have less damage. For ingredients such as tomatoes, ensure that you select the ones that have not been affected by bacteria and diseases. Ensure the interior of the refrigerator is clean to prevent contaminating the ingredients. When the ingredients are in the refrigerator, turn the cooler on and off after a certain period to control the temperatures are low to prevent the rotting of the ingredients (Negara et al, 2021).
Check the day to prepare the dish- if the dish will be prepared in a few days to come, ensure you keep the refrigerator as cool as possible to increase the shelf life of the ingredients. This will improve its freshness and quality for several days.
Cookery Methods
The cookery method to be used for the three includes; deep-frying salmon. The reason why this method is applicable for this dish is that salmon has an oily body which makes it easier to deep-fry and the cost of purchasing oil is reduced. It has an aroma smell that is attractive when deep-fried. The flounder will be grilled due to its smaller size which allows easy heat penetration. It can only take 10 minutes to prepare and the method doesn’t require a lot of ingredients and equipment. Snapper will be roasted as this method is more relaxed due to the low temperatures that are used in the preparation of the dish (Simmons, 2019).
