Executive Summary
The ongoing global pandemic has led to a complete disorientation of day to day flow of activities. Movement has been greatly curtailed as well as social gatherings. People are not allowed to hotels and restaurants anymore. They however need access to their favorite food and drinks even in these difficult times but due to the stringent measures put in place, it is difficult for them to access these services offered by hotels and restaurants. There is dire need for these services to be availed to them, possibly to their doorstep while ensuring that all the set protocols by the ministry of health are followed to the letter. A food truck business is seemingly the best solution to this.
The Company Description
Jikoni food truck services is a mobile food company set to be operating in various estates in Nairobi. The goal of the company is to deliver quality, clean, healthy and delicious food as well as drinks to people locked down in the estates. On top of the menu will be fast foods, fruit salads, ice cream and soft drinks. The jikoni food truck will be plying several estates in a day according to the areas we are permitted to operate in. The aim of the company is to tap the trapped revenue that was being channeled to hotels and restaurants.
Jikoni food truck services will be a pool of professionals ranging from chefs, wait staff, drivers, cashiers as well as health protocols enforcers. Since we anticipate to start with one truck, there will be a minimum of one chef, one driver, three wait staff and one health protocols enforcer, one cashier and one office operator.
Our Products and Services
Although the food truck setting does not allow preparation of five star meals, Jikoni food truck services is ready to provide equally delicious and affordable dishes to our customers. Some of what will be included in our menu will be burgers, hotdogs, fries, sausages, samosas, assorted meals, smoothies, fruit juices, fruit salads, sodas and energy drinks and so on. Our service will be top notch and all customers will be treated with at most respect and consideration. Our customer safety and satisfaction will come before profits.
Our Mission and Vision
Our mission is to become the leading food truck company in Kenya with a household brand and a secure customer base across the country.
Our vision is to be stable enough to offer guidance and training to others who may want to venture into the food truck business.
Our Management Structure
A food truck business has a simple management structure due the few employees required as well as the few components required to set it up. Due to its less overhead and operational costs, it is cheaper as compared to conventional hotels (Berry, 2018). Our management structure will follow the suit. It will include of the operating officer, chef, wait staff, driver, cashiers, office operator and health protocols enforcer.
Their roles will be as follows;
Operating Officer/Owner
* Providing direction for the company
* To oversee day to day operations of the company
* Creating and communicating new rules mission and vision for the company
* Recruitments
* Deciding and paying of salaries
* Deciding food and drinks prices
* Signing documents on behalf of the company
* Evaluating success of the company
Chef
* Manage the kitchen staff
* Come up with the a list of kitchen suppliers and their budget
* Prepare food
* Train new staffs
* Oversee garbage collection
* Make sure health protocols are being followed while preparing food
Wait Staff
* Assist the chef in the kitchen
* Ensure the truck is clean at all times
* Responsible for cleaning the dishes
* Interface with customers, take and deliver their orders
* Ensure customer pay their bills
* Record daily sells and match them with the cashier at the end of the day
Cashiers
* Receive payment on behalf of the company
* Issue receipt to the customer
* Prepare financial reports
* Handle financial transaction on behalf of the company
Drivers
* Drive the truck back and forth to the selling venues
* Ensure the trucks are well maintained and in good working condition at all times
* Responsible for renewing the truck’s licenses, insurance and other documentations needed.
* Schedule routine cleaning and maintenance checkups for the trucks.
Office operator
* Manage operations of the back end office
* Prepare payrolls
* Interact with vendors and suppliers on behalf of the company
* Prepare monthly financial reports for the company
* Handle inquiries and phone calls, emails and media platforms on behalf of the company
* In charge of paying taxes, license fees and work permit renewal fees
Health protocols enforcers
* Ensuring that customers are wearing masks at all times
* Ensuring that customers keep the required distance when taking their orders
* Ensuring that the sanitizing booth is fully supplied and making sure that customers are using is as required.
* Making sure customers do not litter and taking care of any mess that may occur
SWOT Analysis
To be sure we are not venturing into failure, we have undertaken rigorous to make sure our business idea is viable. Though we have a lot of factors working in our favor, we also have several kinks we need to work on to ensure smooth running.
The following is our swot analysis
* Strength
The jikoni food truck services team has been in the hotel industry for long and we therefore have the required experience to run the food business. Our financial capability is also stable. We have most of the required equipment already including the trucks and the kitchen equipment which is a step in the right direction. One truck has the capacity of serving up to 300 customers per day which is a very good start. We have a very committed team of friends that is helping to advertise our business in their estates. The current lockdown situation is also suitable to us as we are assured of customers. Above all, we have undeterred determination to succeed.
* Weakness
In additional to the existing rules and regulations to be followed when opening a food business, there are a lot of other restrictions and protocols added to combat the spread of the virus and they are posing a challenge to the company especially getting a license to operate. Meeting all the added standards of operation is proving to be quite tedious and expensive.
* Opportunities
The current situation has brought about a good opportunity for the food truck business to boom. With hotels and restaurants closed and movement curtailed, we are assured that a lot of people will turn up to our business. This is because will be delivering the services they need but they cannot access to their doorstep with great professionalism, quality and quantity.
* Threats
Just like any other business, the food truck business faces various threats as well. One of the threats includes the hectic city traffic which may hinder the trucks from reaching their sale sites on time which may negatively impact the clients. Also, since people are spending more time at home, they may opt to cook at home most of the time and this may negatively impact the business.

In the past years, fast foods have gained popularity in the country especially among the young generation. They are the most consumed dishes, reaping huge profits for the hotel industry. People have grown to love fast food which has turned out to be like an addiction. Also, due to their busy routines, people have developed a tendency of buying ready food instead of cooking at home and these situations fit perfectly well into our dispensation.
* Target market
Our target market is the young population of students, college students locked down in the estates with no way out as well the whole community at large. The current situation is favorable to us since we are guaranteed of consistent consumers. We will mostly target estates as our selling sites.
