The case study was on Atera Restaurant, a Luxe two-starred MICHELIN restaurant in New York City. Featuring eclectic American cuisine, the restaurant offers an inventive multi-course new American tasting menu and cocktails in an intimate setting. The restaurant has both the main dining room and private rooms, and the purpose of the case study was to increase its profitability. NYC has a variety of world-class renowned restaurants in various cuisines, and thus the competition is stiff, especially with the present POST-PANDEMICeconomy and changing consumer preferences. The case study used SWOT and Porter's Five Forces analysis as decision-making tools for restructuring business processes and products to increase restaurant competitiveness. The owner's mission for the restaurant was to capture diners in an immersive and sensory dining experience. The sensory dining experience has been achieved via the open kitchen, the menu, and the food display that tantalizes different senses of a diner leading to repeat guests. further, the restaurant is committed to serving seasonally available products; hence the menu is seasonally and will offer different items all year round. The first chef hired, chef Matthew, CATAPULTED the restaurant to a two-star Michelin-rated restaurant in six months. Despite the achievement, however, the restaurant was barely breaking even. Thus, the case study for a strategic innovation was to understand how to best restructure the restaurant processes and products to ensure profitability while keeping the clients happy.

Strategic innovation is the entire process of restructuring business processes and products by organizations to provide a higher quality product or service output to their customers (Jon-Arild, 2017). Through the restructuring, organizations secure a competitive advantage through employing strategies different from their competition hence altering the competitive edge and locking in on a specific market. Thus this paper will be a strategic case study for Atera restaurant, focusing on its SWOTs and the Porter’s Five Forces Analysis for recommendations and solutions on Atera’s best positioning for profitability based on the findings.
