INGREDIENTS
Nonstick cooking spray
4 cups of shredded cabbage with carrot
1 pound cooked roast beef, shredded
2 cups fresh bean sprouts
¼ cup finely chopped green onion
¼ cup plum sauce
¼ cup hoisin sauce
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
22 7-inch egg roll wrappers
1/4 cup olive oil
ONE: Preheat oven to 4000F,coat a cookie sheet with sides with cooking spray
TWO: Stir the shredded cabbage with carrot mix ,shredded beef, bean sprouts ,green onion, plum sauce, hoisin sauce, ginger and sesame oil. Place about 1/3 cup of the beef mixture on each eggroll wrapper, fold envelope –style. Place wraps in prepared pan , seam sides down. Use a brush to coat the top of each wrap with olive oil.
THREE: Bake, uncovered ,for about 15 to 20 minutes or until golden brown.
PLAN AHEAD: When cooking a roast beef dinner, prepare extra roast for these wraps.
FREEZE AHEAD: Prepare through step two, but do not brush with olive oil. Place in a freezer container and freezer up to around two months. Defrost completely in refrigerator. Preheat oven . Brush with olive oil and continue according to step three.
