Its discovery took long time ago. Widely recognized by medical personnel and chefs to be a multipurpose additive. Belonging to a family of shallot, leek, Chinese onion, onion, and chive it was used widely by ancient Asians and Middle East. It was renown by ancient Egyptians, and has been used both as a food flavor and traditional medicine as recorded in the Egyptian “Ebers Codex,” in 1550 B.C. Pyramid builders consumed it believing that it gave them great energy as inscribed on the Great Pyramids of Cheops (Lewis par. 1). Currently China is the leading producer in the world with 80 percent. Our bodies need to be health and strong so that we can do daily economic activities.
Scientifically known as Allium sativum, garlic is a common seasoning worldwide. It has been used for several years. The word garlic comes from Old English garleac, meaning speer leek” dating back over 6,000 years (Filippone par.1). The Value of world garlic consumption rose to 18.1 billion US dollars equivalent to 26.5 million tons in the year 2016 which was 8% more than the value of the preceding year. The upward tendency has been experienced since the year 2007. Usage of garlic is projected to surpass 31.1 million tons by 2025 (Filippone par. 3).
